Midday meal perfection…

So I am “stranded” at home today thanks to the car situation, and am spending the time writing and doing web work. I began to get hungry, and a perusal of my kitchen quickly told me I didn’t have any real “fast” stuff to make for lunch. I’m so used to eating leftovers or quickly throwing together something less than nutritious that when I can’t just grab and eat at lunchtime, I feel like I have no options. But I am working on rearranging my thinking; I have plenty of basic ingredients, and the key to better eating is learning how to create goodness from those basics.

I realized I’d have to cook a bit, as I had two chicken breasts left from my last trip to Wild Oats, so I decided to cook them, one to use on a sandwich, and one to use later (at supper, to go with the soup I plan to make). I baked them for 20 minutes in a bit of butter and seasoned with salt and pepper, then chopped one up (while warm) and added to two toasted slices of French bread that each had a thin layer of Nayonaise (hey, I like the stuff) and parmesan reggiano. I grated a bit more parm onto the chicken and closed the sandwich. I then put a big handful of greens into a big bowl, grated some parm over it, and added a touch of oil & vinegar. Add a small glass of wine (hey, I’m at home!), and this became possibly the best lunch I’ve ever made.
